Melt and Mix Chocolate Chip Biscuits

Makes 13 Large or 26 – 30 small Biscuits

Ingredients
1 ¾ Cups Plain Flour
1 Teaspoon Salt
½ Teaspoon Bi Carb Soda
175 Grams Unsalted Butter
½ Cup Brown Sugar
½ Cup Castor Sugar
1 Each Whole Egg
1 Each Egg Yolk
2 Teaspoons Vanilla Extract
1 ¼ Cups Chocolate Chips

Method
1. Preheat oven to 180 c or 160 c for a fan forced oven. Place oven shelf in the middle of the oven. Line 2 trays with baking paper.
2. Whisk the flour, salt and bi carb soda in a bowl.
3. Place the butter in a large heatproof bowl. Microwave until the butter is almost fully melted. (25sec for room temperature butter, 40 sec for fridge cold butter on high)
4. Whisk to finish melting the butter. Add brown sugar and white sugar, whisk energetically for 15 seconds.
5. Add egg, yolk and vanilla, whisk well for 15 seconds.
6. Add flour mixture and mix until flour is almost fully incorporated.
7. Add 1 cup chocolate chips, stir into the flour until fully incorporated. The batter will be quite loose.
8. Stand for 5 minutes for batter to firm up a bit so it is easy to scoop.
9. Place on prepared baking trays leaving room for biscuits to spread. Place the remaining chocolate chips on top of biscuits.
10. Bake on tray at a time and large biscuits take 8 minutes rotate the try bake for 3 more minutes. Small biscuits take 9 minutes in total.
